Many dishes are adaptations of what James Beard Award-winning Chef Schlow learned from home cooks throughout his travels to Italy, featuring seasonal preparations of staples like maltagliati with local crab, chiles, and green onions, and porchetta with orange zest, broccoli rabe, and fennel pollen. Lighter dishes include a seafood salad “Capri style,” a crudo of the day, and swordfish with spicy eggplant caponata and salsa verde. In line with Kimpton's health-conscious philosophy, Casolare serves up nourishing Southern Italian food that uses only the freshest ingredients, with a focus on local fish.
